Menu Plan

Monday- Tacos with the fixin's
Tuesday- Pasta Salad with Pesto Chicken Breast
Wednesday- BBQ pork sirlon chops, l.o. pasta salad
Thursday- Eggs, Toast, Homefries. and either sausage or bacon? some fruit.
Friday- Crabby Patties (salmon cakes) with Velveeta shells and cheese, kiddo will pick a veggie
Saturday- Burgers, Baked taters with broccoli cheese sauce over them
Sunday- Some kinda family dinner.. I haven't decided yet.

Life is so bittersweet



 That's my big boy.. he just graduated from pre-school.. on his way to kindergarten. Time flys too fast.

Menu Plan

Sunday- Stromboli with salads
Monday- (FFR) Barrel Chicken with simple pasta salad
Tuesday- Chicken patty sandwiches with l.o. pasta salad
Wednesday- Ziti with meatballs
Thursday- BBQ pork chops on the grill if weather permits, potato salad, and baked beans.
Friday- Leftovers or stir fry.. most likely C.O.R.N. (making deviled eggs and something else)
Saturday- Family bbq @ MIL's, I am bringing deviled eggs and ?

Hope this warm weather is here to stay. We got our garden planted and my sweet husband has been working on making me a clothes line. Our investment on it was around 40 dollars so I am positive it was a wise one. I just hate using the dryer when the sun is shining. As a last straw to my insanity I was draping blankets off kitchen chairs and the banister railing on our porch. I am cleaning the whole house today in hopes to keep up with it for the week.

A few of my favorite things.

These are a few of my favorite things-

1. My son's little songs he learned in pre-school.
2. Finally some warm days.
3. The clothes line my hubby is putting in for me, I have been wanting one for 6 years.
4. Mocha frozen coffee (looking for an at home recipe).
5. The recent rollbacks at Walmart.
6. .99 cent strawberries at the local market (super cheap for us)
7. Summer right around the corner.
8. Planning a Summer/Luau party for my kidding and finding stuff on clearance for it.
9. Being so happy.
10. Being a MRS. <3

Recipe Review: Sweet and Tangy Meatballs

Sweet and Tangy Meatballs
1 1/2 cups Brown Sugar
3/4 cup Vinegar
3/4 cup BBQ Sauce
3 tsp. Dijon Mustard
3 tsp. Worcestershire Sauce
1 Bag Frozen Meatballs

DIRECTIONS:
Preheat oven to 350. Combine all ingredients, except meatballs in a saucepan to heat up and dissolve sugar. Meanwhile, place meatballs in a 13x9 inch baking dish. When sugar is dissolved, pour heated sauce over the meatballs and cover the baking dish with foil. Bake for 30-45 minutes or until heated through. Serve right away, or put it in your crock pot on low til the party starts!

I can't even say if we liked this recipe or not since I made a handful of changes. I will say I cut the recipe into 1/3 but used a half bag of meatballs. I also added an extra half cup of bbq sauce making a whole cup. They were way too sweet. Next time I will reduce the brown sugar way down and maybe a bit more mustard for a bit more tang. I also made the sauce in a deep fry pan, then added the meatballs, and put a lid on them. I simmered them till they were done. Only one dirty dish and it was non-stick. :)

Myself 1 outta 5 because the sugar was so awful.

Kiddo he ate a couple.

Menu Plan

Sunday- We went to a graduation party @ my FIL's house.
Monday- Chicken parmesan with pasta and bread
Tuesday- Tacos
Wednesday- Stromboli (new)
Thursday- Sweet and Tangy Meatballs with french fries or mac and cheese. (new)
Friday- Pork chops, fried cabbage, and egg noodles.
Saturday- Leftovers

This week I hope we can get our garden started. At this rate we'll never get it in on time. We've been having frost and its MAY! Our little guy graduates from pre-school on Thursday night.. I can't believe it! He's on his way to kindergarten in the fall! Hubby is going to start job searching again since his job has been acting funny lately, and we're looking for a church.
