Menu Plan

Sunday- BBQ Pork Roast with baby carrots and garlicky cheesy bacon smashed potatoes.
Monday- Leftover BBQ pork on sammies, and macaroni salad.
Tuesday- Venison Stroganoff, noodles, and green beans
Wednesday-Spaghetti and meatballs with Garlic toast
Thursday-Get up and go sammies with fried taters
Friday-either Chinese take out or something like pork chops
Saturday- Sweet and spicy kielbasa, rice, and corn

Honey BBQ Pork

Ingredients:
3 pounds boneless pork roast
1 bag (16 oz size) baby carrots
1/2 cup BBQ sauce
1/4 cup honey
1/2 teaspoon salt
1/4 teaspoon pepper


Directions:
Put pork and carrots in slow cooker. Combine remainder of ingredients in small bowl. Pour mixture over pork chops and carrots. Cover and cook on low 8-9 hours, or until pork is tender and thoroughly cooked.

AND this dessert--

Chocolate Covered Pretzel Cheese cake

Ingredients

2 1/4 C. butter flavored little pretzels ,crushed
1/2 C. butter, softened
2 Tbs. brown sugar
2 8-oz. pkgs. cream cheese, softened
1 C. sugar
1/2 Tbs. lemon juice
1/2 pt. whipping cream
1 tsp. vanilla extract
8 oz. hot fudge topping, reserve enough to garnish
Butter flavored little pretzels to garnish
Directions

Combine crushed pretzels, butter,and brown sugar in a small mixing bowl. Press mixture on the bottom and sides of an 8x8-inch baking dish. Bake for 10 minutes in a preheated 350 degree oven. Set aside and cool. Meanwhile, blend cream cheese and sugar until creamy. Add lemon juice and mix well. In a separate bowl, blend whipping cream and vanilla until fluffy (about 30 seconds). Add to cream cheese mixture and mix just until blended. Microwave hot fudge topping on high 30 seconds and stir well. Microwave a little more until melted and smooth. Pour on the pretzel crust (reserve some for garnish). Pour cream cheese on hot fudge topping. Garnish top with some pretzels and reserved hot fudge topping. Refrigerate 3-4 hours. Cut into 12 squares and serve.

Sweet -n- Tangy Pot Roast

Sweet n Tangy Pot Roast

Ingredients:

* 1 boneless beef chuck roast (3 pounds)
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* 1 cup water
* 1 cup ketchup
* 1/4 cup red wine or beef broth
* 1 envelope brown gravy mix
* 2 teaspoons Dijon mustard
* 1 teaspoon Worcestershire sauce
* 1/8 teaspoon garlic powder
* 3 tablespoons cornstarch
* 1/4 cup cold water

Directions:
Cut meat in half and place in a 5-qt. slow cooker. Sprinkle with salt and pepper. In a bowl, combine the water, ketchup, wine or broth, gravy mix, mustard, Worcestershire sauce and garlic powder; pour over meat. Cover and cook on low for 9-10 hours or until meat is tender.
Combine cornstarch and cold water until smooth. Stir into slow cooker. Cover and cook on high for 30 minutes or until gravy is thickened. Remove meat from slow cooker. Slice and serve with gravy. Yield: 8 servings.


I didn't do the cornstarch and water part since the gravy did pretty good at thickening up on its own. We liked it, and it was a good change from the usual roast and veggies we have.

Menu Plan Sunday/Monday


So finally on the wagon for sure. We've already messed up our only going out to eat 2 times a month resolution :( why is it so hard? When we don't have a menu plan we resort to pizza and chinese! So back on track we go!!

Jan. 10th-17th.

Saturday- Tacos, soft and crunchy, with the fixin's.

Sunday- Sweet-n-tangy Pot Roast, red potatoes, and carrots.

Monday-@ MIL's, Roasted Chicken, stuffing, mashed, gravy, and something else.

Tuesday-Chicken Parm. seasoned angel hair pasta, and green beans.

Wednesday-Pancakes and bacon

Thursday-Tacos again (we love them)

Friday-Homemade pizza

Saturday-hot dogs, mac and cheese, and onion rings. (going to try out my new fryer)

I am trying the sweet-n-tangy pot roast for the first time. It was posted on the host site last week and I happen to have all the ingrediants on hand. I'll let you know how it goes.

6 Inches and Counting!

Snow that is, ugh. Yep, I live in Pennsylvania and right in the "snow belt". Which means pretty much any time it snows in PA, we're going to get some of it too. Now last week we got a few inches of ice, which worries me in to craziness when Mr. Bear has to travel over 2 mountains to get to work. Around 11pm last night, I went to bed and there was no snow except what we already had, and upon momentarily waking up at 6:30am when Mr. Bear left for work, I was surprised to see the amount of snow we had accumulated. Over six inches, and it's still snowing. This would be joyful for me, if it were Christmas! But at Christmastime we hardly had any snow, after Christmas, no snow please, because by then I am so over it. So thankfully I got most of my monthly shopping done yesterday before the storm came, one problem was that I didn't know there was a storm coming, and there were people everywhere, especially in our store in town. I went out of town to Wal-Mart and Wegmans for some things. I usually price compare with Wal-Mart, Wegmans, and Weis, and end up at the 3. Wegmans and Walmart are near eachother so I am not doing too much running, but at the end of the day I am beat!! I can't believe some of the kids these days, now I use the term kids loosely because to some I am still at kid at the ripe old age of 22. I know this "kid" was probably 18ish, but he was checking us out Walmart, and he was annoying me. While checking out the folks in front of us, their card wouldn't go threw, so instead of helping them, he was TEXTING on his cell phone! Then when he went to get someone to help, he returned, and while waiting for help he began TEXTING again!!! Now this is a funny one, the woman in front of me after 20 mins, decides she now wants to pay on her walmart card with a check, and the cashier had no clue what she meant.. pay for what? Huh? So while she is writing out the check, you guessed it, he is TEXTING again.. then he runs her check threw and GIVES IT BACK TO HER!! He said "We give them back", and she says "NO you keep them".. my goodness. So between transactions he starts doing it again, how rude. After he checks out our stuff while waiting for me to sign on the line, he does it a last time. I find it so annoying, he was at work, where he's to be working, no playing with his phone!! So there is my mini-vent. Anyways, I have work to do, like stock my pantry, wash dishes, get out of my pj's...oh and the dreaded chest freezer needs organized before I pack my chicken breast... I hate that freezer..you hear me freezer, I hate you... oh no no I love you, no really I do, I just hate how you don't organize yourself, freeze my fingers, and chest when I lean in to dig for 10 minutes to find something. :(

Menu Plan Sunday/Monday

Monday- Chili Mac and salads. I already had frozen some chili, so I'll mix it with some elbow noodles and hope it's good.

Tuesday- BBQ Pork Chops, Bagged noodles, and some veggies or if there's any salad left we'll eat that too.

Wednesday- Salmon Cakes, Mac and Cheese, and peas.

Thursday- Hamburger Helper Lasagna and garlic toast.

Friday- Take out maybe or some chicken nuggets, tater tots, pizza rolls, and fries *junk*

Sat- Chicken stir fry that I have in the freezer

Sun- not too sure, maybe sweet-n-tangy pot roast I saw on Laura's page.

As you can see I need to go shopping. And I didn't follow my menu much from last week either.
I fell off the wagon. :(
